Final Rachel Ray

To finish up the Rachel Ray thingie, here are the final pictures of our dinners the last few nights.

First up we have garlic mushroom pizza. It doesn't look like much, but we forgot to get a photo before cutting it. It's loaded with shitake mushroom, the normal mushrooms, swiss and mozzarella cheese. Also plenty of garlic and evoo. :-)
Next are turkey burgers and warm potato salad. We were surprised by the turkey burgers. Very good. I thought they tasted like sausage (think it was the sage) The potatos were a little blegh. I normally love potatos, especially these little red ones. Maybe I used too much white wine vinegar, but it reminded me too much of coloring Easter eggs.

So the experiment is over. It turns out I can cook afterall. We did skip one of the meals. No matter how hard I tried I couldn't get Jeff fired up about the cheese sandwiches (brie, spinach, tomato) Nothing in there he's fond of. So now we have to try and come up with our own menu plans. Probably something cheaper and hopefully using up some of the stuff I already have in my house.

Any dinner recommedations would be appreciated.

dinner 1:
Chicken sausage sauteed with onion, corn of some kind, small red potatoes tossed in evoo and italian spices.
dinner two:
thin pork chops with the same cheap italian seasoning, wild rice of some kind, steamed broccoli in low sodium vegetable broth, (1 can)
dinner 3:
tortilla shells, small amount of chicken breast cut into strips, mexican rice, onions, peppers, other taco / fajitas items.
Dinner four:
some chicken sausage from the same big pack, spaghetti sauce and noodles, onions, italian seasoning.
Dinner V:
chicken breasts, thin sliced ham, sliced swiss cheese, italian seasoning and evoo. ( slice chicken horizontally and fold back so it is still attached, tuck ham and cheese in pocket, fold back over. Pan sear on both sides about 2 min so chicken is golden on both sides. place in oven for about 15 - 20 min at about 350. This is all an estimation, look at the chicken to make sure it is not pink..duh.. side spinach salad with normal salad fixins.. add some walnuts or almonds..tip: buy a big bag of walnuts and have it for salad for weeks to come.. it makes a normal spinach salad more.. nutty. buy some raspberry vinaigrette. maybe a little red potatoes from the other night that you may have saved to cook this night.

with the tortilla shells not used and the meat and cheese and taco fillings like lettuce.. you can make some wraps for lunch when you come home.

EAT BREAKFAST!!!!!!

Whatever it is, I suggest whole wheat english muffin with a small amount of peanut butter. Or a slice of cheese and piece of canadian bacon. Light and helps with maintaining weight, or loosing. I suggest during the day for you both to buy a bagged cereal ( they are cheaper ) like frosted mini wheat or puffed rice ( alf's natural puffed rice = 72 cents a bag ) to munch on so come lunch he is not starving.


These are easy pan cooked meals that are cheap and tasty. The ingredients repeat on some nights so you can buy a big pack of chicken or potatoes and split it up. This makes things cheaper.

Shopping List

4 - 6 chicken breast halves
4 thin sliced pork chops
pack of about 6 chicken sausage
bag of onions
bag of red potatoes, or regular potatoes to thin slice like potato chips in the oven
2 - 4 cans of corn
head of broccoli ( jeff can do it one night )
box/bag wild rice ( plus what rice needs.. butter? )
bag mexican rice
1 - 2 cans vegetable broth
tortilla shells
1 bell peppers
italian seasoning ( if needed )
evoo ( if needed )
other taco fillings
swiss cheese, 1/4 - 1/2 lb
shaved or thin sliced honey / virginia ham
spaghetti sauce
noodles
spinach leaves, or romaine.. not iceberg
walnuts or almonds
other salad stuff, cucumbers, tomatoes.
raspberry vinaigrette dressing ( if desired.. low fat and great with the walnuts )
whole wheat engish muffins
cheese
canadian bacon
or peanut butter
bagged cereal ( if desired )
